As a rethermalizer, it&#8217;s somewhat different from a regular soup kettle warmer in that its designed to take frozen or chilled food to a serving temperature. A warmer is meant to keep hot food hot. Though not all rethermalizers function as warmers, this machine does.<\/span><\/p>\n<p><span>Furthermore, these induction rethermalizers (items 7470110 and 7470140) use an innovative induction technology to run completely dry. No water is involved! It uses a fraction of the energy and helps improve food quality and minimize waste. It ships complete with an induction-ready inset and slotted hinged cover.<\/span><\/p>\n<p><span>This Vollrath rethermalizer is designed to take a container of cooked food from a chilled state through the HACCP &#8220;danger zone&#8221; to above 165\u00b0 F (73.9\u00b0 C) in less than 90 minutes.
