Sierra’s SHPI is a mobile insulated proofer / holding heater cabinet with a capacity of up to 36 full-size (18″ x 26″) sheet pans with 1.5-inch clearance between the slides. This model is NSF-approved and functions to hold warm or hot food products until they’re ready to be served to customers.

It has a heat mode with 9 adjustable settings, up to 185° Fahrenheit (85° Celsius) and a proof mode that can adjust the humidity between 30% and 100% up to 115° Fahrenheit (46.1° Celsius). There’s an integrated, easy-to-read LED display on the bottom control drawer, which can also be removed for easy cleaning. The cabinet has an air baffle and circulating air blower, which provide uniform heat distribution throughout the unit.

The SHPI features a polycarbonate field-reversible door with an aluminum frame that lifts off for convenient cleaning and accessibility. The proofer has a heavy-duty, all-welded construction with casters and corner bumpers to prevent itself and other equipment from being damaged.

This product comes with a 1-year parts and labour warranty.
